Doubly Chocolate Cookies


1 cup butter or margarine, softened

1 1/2 cups sugar

2 eggs

2 tsp. vanilla

2 cups flour

3/4 cup cocoa powder (unsweetened)

3/4 tsp. baking soda

1/4 tsp. salt

2 cups semi-sweet chocolate chips

1/2 cup chopped walnuts (optional)

Oven: 350

In large mixing bowl, beat butter, sugar, eggs, and vanilla until light and fluffy.

Stir together flour, cocoa, baking soda, and salt. Add to butter mixture.

Stir in chocolate chips and nuts.

Drop by rounded teaspoonfuls onto ungreased cookie sheets.

Bake 8-10 minutes or until just set.

Cool slightly on sheet, then move to wire rack to cool completely.

Makes about 4 1/2 dozen cookies.

Peanut Butter Swirl Brownies


2/3 cup sugar

1/2 cup brown sugar

1/2 cup butter or margarine, softened

2 TBSP. milk

2 eggs

3/4 cup flour

1/2 tsp. baking powder

1/4 tsp. salt

1/4 cup peanut butter

1/3 cup peanut butter chips

1/3 cup cocoa

1/3 cup semi-sweet chocolate chips

Oven: 350

Grease square pan.

Mix sugar, butter, milk, and eggs in bowl.

Stir in flour, baking powder, and salt.

Divide batter in half. Stir peanut butter and peanut butter chips into one half and cocoa and chocolate chips into the other half.

Alternate each into your pan in checkerboard manner. Swirl through the batters with a knife.

Bake 30-35 minutes until toothpick comes out clean.

Should make 16 brownies, 4 rows by 4 rows.

Kahlua Brownies


2 TBSP. water

1/3 cup butter

3/4 cup sugar

1 cup chocolate chips

Splash of Kahlua

2 eggs

1 tsp. vanilla

3/4 cup flour

1/2 tsp. baking soda

1/2 tsp. salt

1 cup chocolate chips

1/2-3/4 cup chopped walnuts (optional)

Oven: 325

Lightly grease/spray baking pan.

Combine water, butter, and sugar into a saucepan and bring to a boil.

Add 1 cup of chocolate chips, Kahlua, and vanilla. Stir.

Remove from heat and pour mixture into bowl.

Add eggs and mix VERY well.

Add flour, baking soda, and salt.

Mix thoroughly. Stir in other cup of chocolate chips and nuts.

Pour into baking pan.

Bake for 30-35 minutes.

Good ol’ Fashioned Snickerdoodles


1/2 cup butter or margarine

1 cup sugar

1/4 tsp. baking soda

1/4 tsp. cream of tartar

1 egg

1/2 tsp. vanilla

1 1/2 cups flour

2 TBSP. sugar

1 tsp. ground cinnamon

Oven: 375

In a medium mixing bowl, beat butter with an electric mixer for 30 seconds. Add cup of sugar, baking soda, and cream of tartar. Beat until combined, scraping the sides of the bowl as you go. Beat in the egg and vanilla. Then beat in as much of the flour as you can with the mixer. Stir in whatever is left.

Cover the dough and chill for one hour.

Combine remaining sugar and cinnamon. Shape cookie dough into one inch balls. Roll balls in sugar-cinnamon mixture to coat. Place 2 inches apart on an ungreased cookie sheet. Bake for 10-11 minutes or until edges are golden. Transfer cookies to a wire rack and let cool. Makes about 36 cookies.
